For your health, sugar doesn’t have to be the enemy. At least when you apply this new technology in which one scoop of sugar has the sweetness of two and only half the calories.

DouxMatok, an Israeli food technology start up, has pioneered a particle to carry sugar that enhances the sweetness so that you’ll need less of it. Their carrier is actually already an additive in many foods, reportedly has no health risks, and doesn’t add any unpleasant aftertaste. It works by coating molecules of the carrier with sugar by use of non-covalent bonds, thus much more surface area of sugar is available while needing less actual sugar molecules.


The start up has made versions for both beverages and food. Depending on the food molecule, it reduces typical sugar intake by 25% to 55%.

DouxMatok’s CEO, Eran Baniel has stated, of this “flavor delivery” technology, “Health is a mixture of the mental and the physical. The beauty of what we do is that we do not deprive people of what they like in terms of taste. We were proven—absolutely proven—as identical in sensory profile to sugars. But whilst we offer people what makes them happy mentally, we help them be happy mentally without consuming too much of what can really harm them.”

Eating too much sugar, something Americans have a problem with, has been linked to increased risk of heart disease, diabetes, obesity and other health problems.

The team is also working on similar technology to cut salt intake.
